The Claire Special is selected from the start by the oyster farmer : it must have a regular shape, roundness and particular thickness; its pronounced concavity announces a volume of flesh greater than the oyster Fine de Claire.
Green or white, the taste of the Speciale de Claire differs from that of the Fine de Claire by the more assertive consistency of its flesh, by its volume in the mouth and by a remarkable balance of sweetness and salinity.
