The oyster is a light food.

She's as lean as fish. Even so-called fatty oysters are not rich in lipid but in glycogen, a reserve sugar. A dozen oysters can replace meat or fish, its protein being of excellent quality. Recent studies show that oysters are low in cholesterol: 3 to 4 times less than meat.

The oyster also provides calcium and phosphorus necessary for building and maintaining our skeleton. Present in oysters, the trace elements zinc, selenium, copper are part of the panoply of antioxidants that allow us to age well because they help protect our tissues. The panel of trace elements and vitamins makes oysters an anti-asthenic (anti-fatigue) food.

Very rich in minerals and trace elements, the oyster provides in particular phosphorus (95 mg / 100 g), a mineral which gives energy and contributes to the good health of teeth and bones, and iron (2.1 mg / 100 g), useful in preventing anemia. Eight oysters thus meet all the daily iron requirements in women (2 mg per day between puberty and menopause).

This food also offers good contributions of copper (1.4 mg / 100 g), calcium (77.9 mg / 100 g), and zinc (26.8 mg / 100 g). This last trace element helps in particular to stimulate the immune system.
To these nutrients is added a high content of vitamins, particularly those of group B.
